Classic Wedge Salad with Gorgonzola Dressing



Awww, the classic wedge salad. It was part of dinner tonight and let me tell you, after eating it, there was no room for anything else! This simple salad has been around for ages. Served in fancy steak houses, extremely easy to make and very fulfilling. Usually topped with green onions, tomato, blue cheese dressing and bacon, iceberg lettuce never tasted so good! 


Serves 4

Ingredients

Gorgonzola Dressing
makes about 1 cup

1/4 cup buttermilk
1/4 cup plus 2 tbsp good mayonnaise such as Best Foods or Hellmans
2 tbsp lemon juice
4 ounces crumbled Gorgonzola cheese
1/2 tsp kosher salt
1/4 tsp pepper


Salad

1 medium head of iceberg lettuce, first leaf taken out and cut in 4 wedges
2 large tomatoes, diced
5 green onions, diced including green parts
1/2 lb of bacon, cooked to a crisp and crumbled


Directions

Cook your bacon til crisp, crumble with a knife, then set aside. Make your dressing. In a small bowl, whisk first 3 ingredients of dressing, then mix in last three and set aside.


Assemble salads. Place a wedge on a plate, drizzle some of the dressing, top with tomato, green onions, bacon and serve!
